Chicken Fajitas
I used to make this once a week when we lived in Amsterdam (we were missing good Mexican food severely), but have since calmed down a bit just because I’m unable to maintain control if these are on the menu.
These are so addictive and, by the slim chance you have leftovers, so damn good the second day.
Please do not buy taco seasoning, no matter how easy it is - the little pack from the grocery store cannot even be compared to a fresh mix. It has a ton more uses also, including dips, BBQ, etc.
Taco Seasoning
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 2 teaspoons black pepper
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon sea salt
- 1/4 teaspoon cayenne pepper
Ingredients
- at least 2 green or red peppers (sliced), but ideally 4
- at least 2 onions (sliced)
- 1-1.5lbs of chicken (cubed)
- shredded cheese
- sour cream
- flour tortillas
Directions
- On high heat, add the onions to an oiled pan and cook until softened
- Add the sliced peppers and start to sprinkle the seasoning over the top layer, slowly mixing
- The goal here is dark, almost burnt, veggies that are generously seasoned. Don’t be afraid to let it sit for a couple minutes at a time before shifting and sprinkling in a bit more seasoning
- In a bowl, mix cubed chicken with a generous amount of seasoning as well. Make sure there is even distribution and you don’t see any part of chicken that doesn’t have at least some seasoning on top of it
- Once the onions and peppers are looking like a cooked-down, darkened mix of amazingness, make a moat in the middle of the pan and add the chicken
- After a few minutes, flip the chicken pieces over in the middle, and continue cooking for a few minutes longer before integrating with the onions and peppers
- Once everything is looking good, cook for just a bit longer and then make sure your fajita components are ready to go
- Take a single tortilla, add sour cream (dropping on top with a spoon and then using the back to spread evenly in a vertical line), sprinkle shredded cheese, and then spoon some of the chicken, onions, and peppers on top
- Add salsa or guacamole of preferred, but otherwise wrap up and enjoy (and then repeat, continue)
